⦁ 400 grams salmon fillet
⦁ 2 tablespoons orange juice
⦁ 1 cup orange pulp
⦁ 1 tablespoons olive oil
⦁ Salt and black pepper, as per taste
⦁ 1 teaspoon lemon zest
⦁ 1/4 cup black beans, cooked
⦁ Cucumber strips, soaked in vinegar (Optional)
⦁ fresh dill
⦁ 1 tablespoon fresh lemon juice
⦁ Take a mixing bowl and combine the orange juice, pulp, olive oil, salt, pepper and lemon zest.
⦁ Arrange the mixture on the salmon fillets and sprinkle some cooked black beans on top.
⦁ Place the fillets in the oven and bake them for 20-25 minutes till salmon is cooked.
⦁ Remove from oven and garnish with some cucumber strips, dill and a dash of lemon juice. Serve hot.
