Ingredients:

Chicken:

  • 1 Pound of Ground Beef
  • ¼ Cup of White Onion, Diced
  • 2 Garlic Cloves, Diced
  • 1 Cup of Enchilada Sauce
  • 2 Cups of Monterrey Jack
  • Olive Oil
  • Tortilla Chips ( For Dipping)

Directions:

  1. Over medium heat place about 2 teaspoons of olive oil in a medium skillet
  2. Once the oil is hot add onions – cook for 5 minutes
  3. Add garlic to the skillet – cook for 3 minutes
  4. Add ground beef – cook till brown.
  5. Drain excess fat from skillet
  6. Pour in enchilada sauce and stir
  7. Sprinkle cheese on top and cover skillet for 10 minutes – set heat to low
  8. Uncover and serve with chips
