⦁ ⅓ cup wheat flour
⦁ ½ cup cornmeal
⦁ 1t baking powder
⦁ 1 banana, peeled and mashed
⦁ ½ cup fresh blueberries, chopped
⦁ 2 tablespoons walnuts, chopped
⦁ 1 teaspoon vanilla
⦁ 1 egg white
⦁ ¼ cup almond milk, unsweetened
⦁ 2 tablespoons maple syrup (Optional and can be replaced with Organic honey)
⦁ Take a large mixing bowl and combine the wheat flour, cornmeal and baking powder together.
⦁ In a separate bowl, place the banana pieces, blueberries, walnuts and mash them together.
⦁ Mix the mashed fruits with the wheat mixture and add vanilla, egg white and almond milk.
⦁ Whip or blend it to form a thick yet consistent mixture.
⦁ Spray a non-stick pan and pour some of the prepared mixture on it.
⦁ Cook over medium heat for 3-4 minutes, or till it starts to bubble up. Flip and cook from the other side.
⦁ Prepare all the pancakes similarly.
