Fruit crumble

Ingredients

⦁ 3 medium Apricots, sliced
⦁ 3 medium peaches, sliced
⦁ 1 apple, sliced and de-seeded
⦁ 2 kiwis, sliced
⦁ 4 strawberries, sliced
⦁ 8-10 black grapes, whole
⦁ 1 tablespoon fresh lemon juice
⦁ 2 tablespoons maple syrup
⦁ 1 tablespoon packed brown sugar
⦁ 2 teaspoons cornflour
⦁ ½ cup rolled oats, plain or any flavor of your choice
⦁ ½ cup crushed coconut cookies
⦁ 3 tablespoons packed brown sugar
⦁ 2 tablespoons plain, fat free Greek yogurt
⦁ 2 tablespoons light butter, melted (I use Land O’Lakes)
⦁ 1/8 teaspoon salt
⦁ 2 tablespoons honey, to drizzle on top (Optional)

 

Directions

⦁ Preheat the oven to 400 degrees F.
⦁ Take a large bowl and combine the fruits together (apricots, peaches, apple, kiwis, strawberries and grapes).
⦁ Squeeze in the lemon juice, maple syrup, brown sugar and cornflour.
⦁ Arrange the fruits mixture over a baking dish and keep aside.
⦁ Take another bowl and mix the oats with powdered coconut cookies, brown sugar, yogurt, butter and salt.
⦁ Mix them well and place this mixture over the fruits in the baking dish.
⦁ Place the dish in the oven and let it bake for 35-40 minutes, till the crumbs look golden brown.
⦁ Once done, drizzle some honey on top and serve immediately.
