Grilled Cottage Cheese Fruit Salad

Ingredients

⦁ 2 mushrooms
⦁ 100 grams low fat cottage cheese
⦁ 1 tablespoon lemon juice
⦁ 1 tablespoon extra-virgin olive oil
⦁ 1 teaspoon carom seeds
⦁ 1 onion, chopped
⦁ ½ cup black olives
⦁ 1 tomato, chopped
⦁ 1 cucumber, chopped
⦁ 5 almonds, chopped
⦁ 1 pineapple round, chopped
⦁ ½ cup green grapes
⦁ 1 tablespoon black olives, chopped
⦁ 100 grams lettuce, sliced
⦁ 1 tablespoon low-fat cream cheese, softened
⦁ 2 tablespoons fresh parsley leaves, chopped
⦁ 1 tablespoon thyme, chopped
⦁ 2 tablespoons dried oregano
⦁ 1 tablespoon basil
⦁ Salt and black pepper, as per taste

 

Directions

⦁ Heat a grill pan and drizzle one teaspoon of olive oil on it. Once hot, place the cottage cheese on it and let it grill on high flame for a minute. Flip and grill the same way from the other side.
⦁ Remove from flame and let it cool. Cut into bite sized pieces and keep aside.
⦁ Take a large mixing bowl and combine the onions, olives, tomato, cucumber, almonds and carom seeds in it.
⦁ Add the apple, pineapples, olives and cottage cheese pieces and mix them well.
⦁ Mix in the lettuce, parsley, thyme, dried oregano, basil and cream cheese. Sprinkle some salt and pepper and toss it well.
⦁ Place it in a salad dish and serve.
