Stuffed Mushrooms

Ingredients

⦁ 10 mushrooms
⦁ 1 tablespoon extra-virgin olive oil
⦁ 1 teaspoon carom seeds
⦁ 1 teaspoon sesame seeds
⦁ 1 onion, chopped
⦁ 2-3 garlic cloves, minced
⦁ 50 grams low-fat cottage cheese
⦁ 1 tablespoon black olives, chopped
⦁ 1 tablespoon jalapenos, chopped
⦁ 1 tablespoon pizza sauce
⦁ 1 tablespoons goat cheese
⦁ 1 tablespoon low-fat cream cheese, softened
⦁ 1 tablespoons Parmesan, grated
⦁ 2 tablespoons fresh parsley leaves, chopped
⦁ 2 tablespoons dried oregano
⦁ 1 tablespoon basil
⦁ 1/2 tablespoon mozzarella, shredded

 

Directions

⦁ Pre-heat the oven at 350˚ F.
⦁ Finely chop the mushroom stems and keep it aside. Grease the outer and inner sides of the mushroom with olive oil.
⦁ Take a large mixing bowl and combine the mushroom stems, carom seeds, onion, garlic, cottage cheese, olives, jalapenos and pizza sauce together.
⦁ Sprinkle some goat cheese, cream cheese and parmesan and toss them well together.
⦁ Add in the parsley, oregano and basil and mix it well.
⦁ Fill this mixture inside the mushrooms to stuff them and top them each with a pinch of mozzarella. Sprinkle some sesame seeds on top and place them in the oven.
⦁ Bake for 10 minutes till the cheese melts slightly. Remove from the oven and serve hot.
