Aunt Jan’s Broccoli Cheese Corn Bread

Aunt Jan’s Broccoli Cheese Corn Bread! I made 2 batches bc I want some for tomorrow as well! My husband and daughter and I LOVE this Corn Bread!! The amount shown is for 1 of the square pans.

Ingredients :

1 box of Jiffy Muffin Mix
4 eggs
2C Shredded Cheese (I just use cheddar)
1 medium diced onion
1 box chopped broccoli, thawed and drained
1 stick margarine


Directions :

Preheat oven to 375°
Melt stick of butter in 9×9 pan in oven while. preheating
Mix together muffin mix, eggs, diced onion
Squeeze out as much liquid from the thawed broccoli as u can. Mix it in with all other ingredients.
pour mixture into pan with melted butter. Spread out to corners and try to even it all out.
Bake in 375° oven for 30-40 min or until a butter knife comes out clean.
This is not an original recipe. She’s kept it for a good while and passes it around to whomever wants it!!

I added a picture of the box so no one gets confused about it being corn bread or muffins. Most southern cooks know that Jiffy Corn Muffin Mix is also cornbread!
