Ingredients:

TOPPING:

3/4 c bread crumbs (store-bought or make your own)

2 tbsp butter, melted

FILLING:

1 bunch broccoli (about 1 ½ lb), stalks cut off, florets trimmed into 1-inch pieces

12 oz penne pasta

2 tbsp olive oil

1 medium onion, minced

6 medium garlic cloves, finely minced or pressed through a garlic press

1 tsp dried thyme

¼ c all-purpose flour

2 c low-sodium chicken broth

1 c heavy cream

1 tsp salt

½ tsp pepper

1 ½ lb boneless skinless chicken breasts (about 3), trimmed and cut into bite-size pieces

3 oz smoked mozzarella, shredded

8-oz jar oil-packed sun-dried tomatoes, drained and chopped into pieces

Directions:

Step 1: Add the butter and bread crumbs in a small mixing bowl. Stir until well mixed.

Step 2: Apply cooking spray in a 9×13-inch baking dish.

Step 3: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 4: Place a large pot with salted water on the stove and turn the heat to high.

Step 5: When the water is boiling, add the broccoli and cook for about 1 minute.

Step 6: Remove the broccoli right away and set it aside.

Step 7: Add the pasta and cook for 1 to 2 minutes or until al dente.

Step 8: Drain the pasta and rinse with cold water to stop the cooking process.

Step 9: Clean the pot with paper towels, then add 1 tablespoon of oil and allow it to become hot.

Step 10: Add the onion and cook for about 5 minutes or until brown.

Step 11: Add the garlic and thyme. Sauté for about 30 seconds or until aromatic.

Step 12: Add the flour, salt, and pepper. Cook for 1 minute or until golden brown.

Step 13: Add the cream and broth. Whisk until well mixed.

Step 14: Simmer the mixture for a few minutes while whisking.

Step 15: Add the chicken and cook for 6 minutes.

Step 16: Add the smoked mozzarella and sun-dried tomatoes. Stir until well mixed.

Step 17: Put the broccoli and the cooked pasta back to the skillet. Toss until well mixed.

Step 18: Move everything into the greased baking dish and top it with bread crumbs.

Step 19: Place it inside the preheated oven and bake for 15 minutes or until done.

Step 20: Serve and enjoy!
