This is a delightful cookie candy and if you love caramel and coconut you will be in heaven. We use to have a treat like this at our candy store…it was large square marshmellows dipped in caramel and rolled in coconut.
Cook time: 10 Min Prep time: 20 Min Serves: Depending upon how big you make the balls
28 caramels (about 8 oz.)
1/4 c butter or margarine
2 Tbsp half ‘n half or milk
1 1/2 c confectioners sugar, sifted
1 c salted peanuts
2 c miniature marshmallows
1 c flaked coconut
1. In 2-quart glass measure, place caramels, butter and half ‘n half. Cook at HIGH 5 minutes in the microwave, or until melted and smooth, stirring after 3 minutes. Stir in sugar until smooth; add peanuts. Stir in marshmallows just until lightly coated.
2. Mixture will be cool enough to shape caramel mixture into balls; roll in coconut until well coated. Store in covered container.
