Cream of Brie Soup


This soup is so good, with lots of melted brie in it. It’s practically a meal in itself, with a good green salad and a loaf of bread. Unknown Source

1/2 c chopped onion
1/2 c chopped celery
1/4 c butter (1/2 stick)
1/4 c flour
14 oz chicken broth, 1 can
2 c milk
16 oz round brie cheese, rind removed
crumbled cooked bacon, optional
chopped chives, for garnish


1. Sauté onion and celery in butter in pan until tender. Stir in flour. Cook for a few minutes, stirring constantly. Stir in broth and milk. Cook for 5 minutes or until thickened, stirring constantly. Add cheese and cook until cheese is melted, stirring frequently. Process soup in blender an return to pan. Stir in bacon. Ladle into serving bowls and sprinkle with chives. Serves 4
