Ingredients:

Streusel Crumb Topping:

1 cup all-purpose flour

¼ cup light brown sugar

¼ cup granulated sugar

¼ teaspoon salt

6 Tablespoons unsalted butter-melted

Lemon Muffins:

1 ½ cups all-purpose flour

¼ teaspoon salt

½ teaspoon baking powder

¼ teaspoon baking soda

1/3 cup unsalted butter softened

¾ cup granulated sugar

2 eggs

2 Tablespoons lemon zest

1 teaspoon vanilla

1 teaspoon lemon extract

2/3 cup Greek yoghurt

2 Tablespoons lemon juice

Cream Cheese Filling:

8 ounces cream cheese room temperature

¼ cup granulated sugar

1 teaspoon vanilla

Glaze:

¾ cup powdered sugar

1 ½ –2 ½ teaspoons lemon juice

Directions:

Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.

Step 2: Line with paper liners twelve count cupcake pan.

Step 3: In a medium mixing bowl, add the sugar, flour, salt, and brown sugar. Stir until well mixed.

Step 4: Add the melted butter and stir until well mixed.

Step 5: In another mixing bowl, add the baking powder, flour, salt, and baking soda. Whisk until well mixed.

Step 6: In another mixing bowl, add the sugar and softened butter. Stir for about 2 minutes until blended.

Step 7: Add the lemon zest, eggs, lemon extract, and vanilla. Stir until well mixed.

Step 8: Add the lemon juice and Greek yoghurt. Stir until well mixed.

Step 9: Add the dry ingredients and beat until well mixed.

Step 10: Combine sugar, vanilla, and cream cheese for the cream cheese filling.

Step 11: Add a tablespoon of the muffin mixture into every cup, then 1 tablespoon of cream cheese, then top it with the muffin mixture.

Step 12: Top each muffin with crumbs.

Step 13: Place the inside the preheated oven and bake for 25 minutes or until done.

Step 14: Remove from the oven and allow them to cool at room temperature.

Step 15: To make the glaze, mix lemon juice with powdered sugar.

Step 16: Drizzle each muffin with the glaze.

Step 17: Serve and enjoy!
