Nannies Skillet Creamed Corn



8 ears of fresh corn, shucked and cleaned
2 T. bacon grease
2 T. all purpose flour
3/4 C. half & half
2 T. butter
1/2 tsp. salt
1/4 tsp. pepper





Using a large bowl, take each ear of corn and cut the kernels off the cob then use a butter knife and scrape down each cob to get the corn milk out of it. Heat the bacon grease in a 10″ iron skillet over med. high heat. To the bowl of corn, add the flour and half & half, stir to combine well. Pour the corn into the heated skillet and cook, stirring frequently for 12 minutes. Stir in the butter, salt and pepper cooking just long enough for the butter to melt before serving.
