This is one of my many meatball recipes, and are always welcomed by my family and friends. Doubling the recipe makes enough to freeze for a later time. Enjoy!
I USUALLY DOUBLE RECIPE FOR LEFTOVERS AND THEY FREEZE WELL TOO
1 lb ground beef
1/2 lb ground pork
2 beaten eggs
1/2 c italian bread crumbs
2 clove minced garlic
1/3 c fine chopped green onions
1/4 c fresh minced parsley
1/4 c shredded parmesan cheese
1/2 tsp salt & pepper
Oil for browning
Your favorite sauce
1. In a medium bowl, add the first 9 ingredients and blend just until everything is incorporated. I use my fingers.
2. In a large skillet add about 1/4 cup of oil and turn heat to medium – med high. Roll meatballs, about the size of a golf ball. Place in hot grease and using a large spoon, turn as they brown. Once all are browned, drain on paper towel…
3. Place the meatballs into your favorite sauce ( I sprinkle with a little shredded parm.) and simmer for about 20 minutes, making sure meatballs are completely cooked in the center. Serve with spaghetti or are delicious in a meatball hoagie!
