This tastes like the best stuffing ever, it is baked in a 8×10 casserole, just like regular bread stuffing, but is so moist and flavorful. A great way to use excess zucchini from the garden, or just freeze the grated zucchini and use for future enjoyment in this dish.
1 tsp oregano, dried
1 tsp black pepper, coarsely ground
1 tsp salt
1/2 c vegetable oil
1 medium onion, chopped
1 1/2 c all purpose baking mix
1 1/4 c American cheese, grated
4 c zucchini, grated
1. Combine all ingredients and pour into an 8×10 inch glass dish.
2. Top with extra grated cheese and bake in preheated 350 degree oven for 50-60 minutes.
